The extra vergine olive oil called “OLIO COLATO” is made by cold- pressure of olives with an typical original method of Alfei Mill. This type of processing is called sinolea through which dripping oil is produced. More technical is a process where the oil is extracted when it’s cold through a mechanical system of steel blades that infiltrate horizontally into olives paste just crushed, so you can obtain the pressing flower in rare oil drops. It’s not a centrifugal process, so the product is not subject to any type of heating in order to not alter organoleptic qualities o the oil. TIPS: low acidity and rich of antioxidants. It’s recommended healthy and proper diet.
