VINE: Pecorino. TYPE OF GROUNG: clayey and full of microelements. SYSTEM: rammed cordon, planting density 4.000 Ha/plants. HARVEST: early of September METHOD OF PRODUCTION: The grapes have been put in full press, making a very soft pression with prior cold maceration.The must is decanted for 8-12 hours and then pour off starting a froth of fermentation very slowly and gradually up to leave a residual sweetness balanced with acid ratio. COLOR: straw yellow with light golden tones. PERFUME: : rich and penetrating of ripe fruit. Expresses flavors of apple, pineapple and broom, topped with a touch of vegetable. TASTE: fresh, fruity, tart and of good thickness and body with persistent vitality. TEMPERATURE: about 8-10°C. ALCOHOLIC STRENGTH: 11,5%
